Cobbler Crumble

  • 1 cup almond flour (Bob’s Red Mill)
  • 1/3 coconut flour
  • 1/4 cup Swerve Confectioner Sugar Replacement
  • 1.5 teaspoons ground cinnamon
  • 1/8th teaspoon salt
  • 1/4 cup chilled butter, cubed (Earth Balance for Dairy-Free)
  • 1 tablespoon half + half or coconut milk
  • 1 teaspoon vanilla extract


  • 2 + 1/4 cups almond flour
  • 1/2 cup Swerve Confectioner Sugar Replacement
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder (Hain brand is Grain-Free)
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 1/2 cup + 2 tablespoons half + half or coconut milk
  • 2 tablespoons olive oil
  • 1 tablespoon vanilla extract
  • 1 tablespoon apple cider vinegar
  • 2/3 cup fresh grated apple (not apple sauce)

Glaze (optional)

  • 1 tablespoon melted butter (Earth Balance for Dairy-Free)
  • 1.5 tablespoons cream (half and half or coconut milk fine as well)
  • 1 teaspoon vanilla extract
  • 1/3 cup Swerve Confectioner Sugar Replacement
  • 1/8th teaspoon salt


  1. Preheat oven to 350 degrees.
  2. Line your bread pan with parchment paper. We love this 1 pound USA Pan.
  3. Put together your cobbler crumble first: In a large bowl, whisk together almond flour, coconut flour, Swerve, cinnamon and salt. Cut in butter with a pastry cutter. Add milk, vanilla–then using your hands, work the wet ingredients into the flour and butter until you have dough. You will break this apart and crumble it over the bread batter later–set aside for now.
  4. Go ahead and use a grater to shred 2/3 cup of fresh apple.
  5. Now mix together your batter: In a large bowl, whisk together almond flour, cinnamon, baking soda and baking powder. Sift in swerve. Whisk until combined evenly.
  6. Add eggs, milk, olive oil, apple cider vinegar and vanilla extract. Blend until smooth with whisk or electric hand mixer. Add apple and blend once more. Pour batter into your parchment lined bread pan. Break your crumble topping into pieces and sprinkle evenly overtop. Cover your bread pan TIGHTLY with foil. Bake in a preheated oven for 65 minutes covered, then 8 minutes uncovered. You must let your bread cool COMPLETELY before slicing. We set it in the freezer for 35 minutes or so–cools quickly so you don’t have to wait too long for that first bite!
  7. Slice cooled bread and store leftovers in the fridge in an airtight container. Delicious right out of the fridge or warm it on a plate in the microwave for 15 seconds on cooler days. Enjoy!
