1 tablespoon gelatin (Knox is fine or Now foods brand)
1 teaspoon baking soda
1/8 teaspoon salt
1/4 cup chilled butter, cubed
1 egg
3 tablespoons coconut milk or homemade almond milk (cream or half + half for keto/low-carb version)
3/4 cup shredded Swiss cheese (cheddar or parmesan are also great)
3/4 cup diced ham (salt cured)
***for additional flavor, try adding chopped green onions
Simple Dijon Butter
1/4 cup butter
2 tablespoons dijon mustard (This mustard is SCD-friendly)
Instructions
Preheat oven to 350 degrees
In a large bowl, whisk together almond flour, coconut flour, gelatin, baking soda and salt.
Cut chilled butter into flour with a pastry cutter in the same manner you would for a pie crust.
Add shredded cheese and diced ham and whisk into flour/butter mixture evenly.
Add egg, “milk”, and mix them into flour by hand until dough forms. Dough will be sticky. Let your dough rest for a minute while washing hands from excess dough.
Form the dough into a disk. (See our blueberry scone recipe for photo instructions of this process.)
Place your dough disk onto a parchment paper lined baking sheet. Flatten it out just a bit and cut into 4ths for large size scones or into 8ths for medium/small scones. (They expand in size a bit while baking)
Bake in a preheated oven at 350 degrees for a total of about 35 minutes. At the 15 minute mark, turn the baking sheet 180 degrees. 10 minutes later, gently place a piece of foil over top to prevent over-browning. Bake another 10 minutes. The scones at this point should be firm on the exterior but a a little tender in the center, they will firm up during the cooling process. They will be golden on top, with a slight browning on the edges.
Cool on a cooling rack for 30 minutes and serve.Or cool completely, store in an airtight container in the fridge and toast lightly before serving. While the scones are cooling, cream the butter and dijon mustard together until smooth. Pack butter into a condiment dish and serve with butter knife. Spread on scone and enjoy!
