Piña Colada Smoothies (Grain-Free + Vegan)

Cinco De Mayo is just around the corner! Time for Piña Coladas!😎
This smoothie is loaded with all kinds of goodness–fresh pineapple, banana, lime, honey, and a lovely blend of coconut + almond milks. (And a rum option if you prefer a boozy smoothie)!

We decided to make our own almond milk from scratch for this recipe and you know what? It’s surprisingly uncomplicated thanks to “The Bigger Better Nut Milk Bag” made by Ellie’s Best—it totally takes all the hassle out of the process! We are never going back to store-bought! Plus, the homemade version has a lovely, natural sweetness to it that pairs beautifully with the coconut milk in this recipe.

Here is our recipe for homemade almond milk, and you’ll find the Piña Colada Smoothie recipe below that. Have a happy and safe Cinco De Mayo and enjoy your Piña Colada Smoothies!🍍🍍🍍
Almond Milk
2 cups blanched almonds
2 cups water
1 teaspoon honey
1/2 teaspoon vanilla extract
tiny pinch of salt
1/8 teaspoon guar gum (optional)
Instructions
Place blanched almonds in a bowl of water, cover and leave to soak overnight.
Rinse and drain the almonds.
Place two cups of water and almonds into the blender. Blend at high speed for 2-3 minutes.
Place your Ellie’s Best Nut Milk Bag or cheese cloth in a large bowl. Pour pureed almonds and water into the bag and squeeze to release the almond milk from the bag.
Add honey, vanilla extract and salt if desired. Refrigerate any leftovers for 2-3 days.
If you prefer a “store-bought” taste, heat the almond milk in a pan and whisk in 1/8 tsp guar gum. (Will thicken as it cools). Add in honey and vanilla to taste along with a very small pinch of salt. Leave to cool to room temperature, pour into an airtight container and refrigerate for up to a week.

Ingredients

Scale
  • 3/4 cup coconut milk
  • 3/4 cup almond milk
  • 1 1/2 cups pineapple chunks
  • 1 banana
  • 3 tablespoons lime juice (use the zest too if you love lime)
  • 1 tablespoon honey (optional)
  • 1/2 teaspoon coconut extract (optional)
  • 2 ounces light rum (optional)

Instructions

  1. Combine coconut milk, almond milk, pineapple chunks, banana, honey, lime and coconut extract in a blender. Puree until smooth. Add in light rum if desired and blend again.
  2. Pour into two glasses and garnish with pineapple wedges. Enjoy!
