These Vegan + Paleo Cinnamon Apple Donuts are WAY too good to be grain free—but they are! Get ready to sink your teeth into these soft baked beauties, bet you can’t eat just one!

| Vegan + Grain-Free Cinnamon Apple Donuts | Hooray for donuts! I wish I could express to you just how incredibly delicious these apple cinnamon treats are–it’s virtually impossible to just have one unless you freeze the rest right away–which of course I have to do–otherwise I’m just like Pacman, I’ll keep chomping and chomping away! 😉

And this is a happy recipe– you know how some recipes feel like a ton of work and you have to draaaagg yourself into the kitchen to even preheat the oven? Ugh, do I ever know that feeling. These, my friends, are actually a joy to make. I don’t know if it’s the amazing smell of apple and cinnamon or the cute little donut pan–or piping the batter into the wells (so satisfying!!) Whatever it is, you’ll be smiling, I guarantee it.

You will need a special pan for these, we love  this Wilton Donut Pan, super easy to use and doesn’t take up much space. You will also need a large ziplock bag or piping bag for the batter. Also, if you love these cinnamon apple donuts, you’ll also love our vegan pumpkin donuts!

**We use this Wilton Donut Pan


Ingredients

Scale
  • 1.5 cups almond flour
  • 2/3 cup tapioca starch
  • 1.5 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 3 tablespoons maple syrup
  • 1/2 cup applesauce
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons vanilla extract

Coconut Sugar Topping

  • 3/4 cup coconut sugar (or regular sugar for vegan)
  • 1 teaspoon cinnamon
  • 3 tablespoons melted ghee (or Earth Balance for vegan) (in dish to brush on cooled donuts before adding sugar).

Instructions

  1. Preheat oven to 350 degrees
  2. In a large bowl, whisk together almond flour, tapioca starch, cinnamon and baking soda.
  3. Add maple syrup, applesauce, olive oil, apple cider vinegar + vanilla extract. Combine well until batter is smooth. Let batter rest 5 minutes, it will thicken just a bit.
  4. Grease donut pan well. Spoon batter into icing bag (or large ziplock bag) and then cut off the tip. Pipe batter into wells. (Image below from our pumpkin donuts).
  5.  
  6. Place in a preheated oven and bake at 350 degrees for 12 minutes then rotate the pan 180 degrees and secure with foil and bake an additional 10 minutes. The foil coverage will steam the donuts, making them moist and delicious.
  7. At the 25 mark, the donuts will still be soft to touch and golden around the edges. They will firm during the cooling process. Remove from oven and set on cooling rack. Leave them to cool untouched for 30 minutes- they will continue to set during the cooling process. After they are completely cooled, run a knife gently around the edges and then carefully flip pan over onto wire rack. Allow them to sit for an additional 10 minutes undisturbed.
  8. While you’re waiting, whisk together your coconut sugar topping. Brush donuts with melted ghee and roll in coconut sugar mixed with cinnamon. Store leftovers in airtight container, enjoy!
