Keto Mint Fudge Cupcakes
These Keto Fudge Cupcakes are a mint chocolate lover’s dream! Perfect For St. Patty’s Day, or any day for that matter. A delicious, low-carb way to conquer any seemingly insatiable sweet tooth!
Happy March 1st Friends! St. Patrick’s Day is almost upon us and we thought this would be an excellent way to celebrate!🍀Like many of you, I have long been obsessed with the pairing of mint & chocolate and this recipe gives you a dreamy double dose. And I just want to take a second to mention this fudge frosting, it’s just out-of-control delicious. I could seriously eat that part alone and be happy, SO yummy!
So this was our first time working with gold leaf– and friends, we definitely DID NOT nail it!😂 Hence the very little you see here in the photos. It was even more delicate than we’d imagined and that does not turn out well with a ham fisted approach, haha! But it’s good to have goals and we look forward to revisiting it again in the future. I do recommend giving it a shot though, I have a feeling you guys will be way better at it than we were! We used this brand, it was $7.99 for 12 small sheets.
One thing to note about these scrumptious cupcakes is that you have total control over the presence of mint–how intense or mild of an experience you prefer. I give the recommendations below in the recipe. I honestly love it both ways, it just depends on my mood–do I want Peppermint Patty Style flavor or a delicate hint of mint that rests just beneath the flavor of the chocolate? You decide, you can’t go wrong!

- 1.5 teaspoons peppermint extract for intense mint flavor (or 1/4 to 1/2 teaspoon for milder flavor).

- Fresh mint leaves for decor (we dipped ours in some melted Lily’s Unsweetened Chocolate Chips. You can add a tablespoon of coconut oil to thin the melted chocolate. We decorated the edges with gold leaf.)

- 1/4 teaspoon peppermint extract (or 1/2 teaspoon for more intense flavor)

- Melt the 8 squares of Unsweetened Baker’s reserved for the frosting in a microwave safe bowl at 30 second intervals until melted, stirring each time. When chocolate is melted and smooth, stir in your melted butter with a dry fork or whisk. Add in the vanilla and peppermint extracts, then quickly whisk in the milk.
- Pour chocolate mixture into a mixing bowl. Sift Swerve Confectioner, cocoa powder and salt over top. Blend with a hand mixer until smooth–frosting will be loose at this point. Place the mixing bowl in the freezer for 7 minutes to allow the chocolate and butter in the frosting to set. Remove from freezer and blend on medium speed to break down the hardened frosting and then on high speed until it gets nice and smooth. You can blend in an additional tablespoon of milk at this point if you want it even creamier and a bit thinner.
- Pipe or spread frosting onto cupcakes immediately after blending and serve. Store leftovers in an airtight container to keep them moist and refrigerate. Let them come to room temperature before serving again. Enjoy!
