Hi Friends, sometimes life calls for cake but so often we lack the energy and time that go into the preparation of one. Well I’ve got good news because this Grain-Free beauty takes just four minutes in the microwave!

This can potentially solve a last minute birthday treat crisis and can also quickly boost morale at home after a tough week–who doesn’t want to be surprised with a rich chocolate cake piled high with frosting?

We’ve created 2 versions of this cake, you can find both recipe cards below– you’ll see the sugar-free keto version first, and just keep scrolling down if you prefer our traditional grain-free version. Both are just heavenly and would make a wonderful Gluten-Free Valentine’s Day treat.

You will need a microwave safe 1 quart (4 cup) glass container, we love this Oxo container as well as these Pyrex containers. They just need greasing before you add in your batter. They cook uncovered in the microwave for four minutes and cool quickly in the freezer while you get the frosting together. You can also just dust the cake with some powdered sugar or Swerve and serve it warm, it’s scrumptious either way.

For Keto confetti, we like Good Dee’s sugar-free Food Sparkle as well as their sugarless Sprinkles. You can also try our homemade keto sprinkles from our Keto Devil’s Food Cupcake recipe. For the traditional grain-free version, we used these rainbow jimmies.

This cake offers 4 large servings or 8 small pieces. We just cut the cake in 4ths and give everyone a spoon to dig in! It’s meant to be eaten immediately after preparation.

Grain-Free Microwave Cakes (Keto Version)

Frosting (Or simply dust with Swerve Confectioner + serve warm)


Instructions

  1. Spray your 1 quart glass container with Pam olive oil spray, or grease with butter or Earth Balance Spread. Set aside.
  2. In a large bowl, whisk together almond flour, Swerve, cocoa powder and baking powder. Make sure all dry ingredients are incorporated evenly.
  3. Add egg, milk, olive oil and vanilla extract. Whisk again until batter is smooth.
  4. Use a rubber spatula to guide batter into your glass container, it will fill just 1/3 of the way full.
  5. Place container into microwave for 4 minutes.
  6. With oven mitts, remove your cake from the microwave.

  8. Place it into the freezer to cool for about 15-20 minutes. (Or simply dust with powdered Swerve and serve warm if you don’t prefer frosting).
  9. While you’re waiting for your cake to cool, go ahead and make your frosting.
  10. Place softened butter, half + half and vanilla in a medium to large mixing bowl. Whisk Swerve Confectioner, cocoa powder and salt over top. Blend with hand mixer on medium, then switch to high until frosting is smooth and creamy. (Add a touch more milk for a thinner/creamier frosting, or more Swerve for a thicker frosting).
  11. Spread frosting on cooled cake and serve immediately. We cut ours into 4th’s and give everyone a spoon to dig in. It can also be cut into 8th’s and served as small slices on a plate. This fun and messy microwave cake is meant to be eaten immediately after preparation. Enjoy!

  • 1.5 cups almond flour
  • 1/2 cup sugar
  • 1/4 cup + 1 Tbsp tapioca starch
  • 1/4 cup cocoa powder (Droste for richer flavor + color)
  • 2 teaspoons baking powder (Hain brand is Grain-Free)
  • 1 egg
  • 1/3 cup + 1 Tbsp milk
  • 1/4 cup olive oil
  • 1 tablespoon vanilla extract

Frosting (Or simply dust with powdered sugar)

  • 1.5 cups powdered sugar (Wholesome brand is grain-free)
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 6 tablespoons softened butter or Earth Balance
  • 1 tablespoon milk or coconut milk
  • 2 teaspoons vanilla extract

Instructions
